One of my most favorite recipes when I have leftovers from an earlier meal.  I have given this chicken patty recipe a spicy Indian twist for the added kick.

So the festive and holiday season is over and time to make resolutions which almost no one sticks to.

Its also the time when those who hosted guests, lunches, and dinners to be left with an array of small dishes of leftover meats or veges.

One of the pertinent issues is the usage of the gastronomical bomb laying dormant in your fridge without making others feel like a  ….’stuffed turkey’ !?

I often cook in large portions, freeze part of it for emergency days or simply serve it again by either recycling or up-cycling it!

Repurposing Leftovers & Great Lunch Box Idea

Recreating dishes with leftovers is a simplified way of serving something new to your guests as most of the legwork of chopping or cooking is almost done.  So all you need to do is repackage and present.

We love to entertain and have people over, sometimes at very short notice. This leaves me with little time to cook from scratch, so I tend to look for something that can is quick to make.

In one of my previous posts, I mentioned about my new found love with pre-packaged rolled doughs. The love story continues and the passion is heightened when it comes to giving a makeover to the leftovers!!

Sometimes I quiz my family on the ingredients I use and it becomes quite a game that ends with raised eyebrows and few amused tutting after full consumption of the meal!

Pre- Packaged Shortcrust Pastry Dough to the rescue And Cooking Tip to Increase Portion size 

The base used for this recipe is a shortcrust pastry. You can use any brand you like.

I have used a filling of leftover Teriyaki chicken.

The quantity was a bit too less to be served for another meal. So a trick for recycling a small portion of leftover is to try and find complimentary ingredients, In this case boiled potatoes, that increase the quantity to make it into a more substantial next meal!

This particular spicy Chicken Patty Recipe goes well with chunky vegetables like carrots, cauliflower, mushroom which gives it a bit of a bite.It also makes a good lunch box meal too!

Add cheese for that added taste if you wish!

So lets start the makeover !!

Spicy Chicken Patty recipe

 

Prep Time: 15 minutes

Cook Time: 20 minutes

Total Time: 35 minutes

Yield: 4-6

 

Ingredients

For the filling:
    • Leftover chicken or any meat – 1 cup, shredded or cut into small pieces

 

    • Boiled potatoes – 1 cup, mashed

 

    • Onions – 1, finely chopped

 

 

 

    • Oil- 2 tbsp

 

  • Salt to taste

Instructions

Preparing the filling
    1. Take the leftover chicken or meat and shred into bite sized pieces or chop it into bite sized pieces.

 

    1. In a pan heat 2 tbsp of oil. Once its hot add the chopped onions and saute for 5 mins until translucent.frying-onioins

 

    1. Add the chicken pieces to the onions and saute for further 2 minutes.chicken-and-onions

 

    1. Next add the potatoes, ground spices, salt and mix well togetherpotato-with-spices

 

    1. Mix all the ingredients well together to make it into a smooth filling and set aside to cool.potato-filling

 

    1. Roll out the pre packed dough into oblong shapes to prepare it for the filling.

 

    1. Take a large spoonful of the cooled filling and place it in the middle of the rolled out dough.patty-with-filling-2

 

    1. Fold one side of the dough over and above the filling to make it into a shape of a shell and seal the ends with a fork to make a pattern.folded-patty-fb

 

  1. Bake the filled patties for 10-15 minutes on 250ºC until golden brown. Remove and serve with ketchup.

For the filling:
Leftover chicken or any meat – 1 cup, shredded or cut into small pieces
Boiled potatoes – 1 cup, mashed

Roasted cumin powder – 1 tsp
Chili powder – 1 tsp
Oil- 2 tbsp
Salt to taste
